Cucumbers can be cooked, but like melons and winter melons they're mostly suitable for sautés, warm salads and for BQQ. They don't do great in baked recipes. In a lasagna they would not work well. read more

Cucumber is really designed to be used as a raw vegetable and not in a dish that is cooked. The main reason it is not ideal for lasagna is it contains a high percentage of water which would release into the lasagna making it very watery.
