But you want barrels aged in maple syrup bourbon barrels, not beers brewed with maple syrup. As stated about, maple syrup is highly fermentable and will just raise the ABV, unless the brewer leaves a lot of residual sugars. You can tap it, however, (if it's a sugar maple) at the end of winter and extract sap, which you can boil down for syrup. Some of my neighbors in Detroit do this. read more
