White beans have a mellow, starchy buttery taste. They mostly taste like whatever sauce or broth you cook them in, and kind of blend in. Red beans have more taste of their own. They have a little bit of an earthy, hearty taste. If you put red beans in a dish, the dish will taste like beans a little, they don't blend in as much as white beans. read more
