I eat the skin/scales every time as well. The only thing I have come across online is that toxins tend to build up in the fat, which is mostly concentrated close to the skin. So if you eat farmed salmon, I wouldn't eat the skin. If you eat wild salmon, the skin is very healthy and you can't even tell it has scales if you are baking it. read more
