Having nothing to do with induction stoves, you should always preheat your cast iron or any pan for that matter. Adding a bit more to my answer, although you have to take more care not to break the top of your stove, cast iron and induction stoves are a marriage made in cooking heaven. They are very well suited for one another. read more
