On low heat, melt a couple of teaspoons of ghee (or butter; even vegetable oil will do) in the vessel the rice is to be cooked in, add the spices, fry till the aroma of the spices is released (take care not to burn them), drain the rice and add it to the pot. read more

A good grind of black pepper. A couple shakes of dried herbs, or a small handful of fresh chopped herbs. A good dollop of olive oil. We find that this hits all the major notes you need. The olive oil gives it a nice silky smoothness, the Adobo and black pepper hit most of the seasoning notes you need, and the herbs add a bit of freshness to it. read more
