Well for starters, the extra heat will have to make you slightly change the standard recipes. Your cheeses will mature faster and the possibility of mold increases a lot more. read more
Other than that you will need to look at your milk. I seam to notice that there is more fat in the milk from cows in a tropical climate. I might be wrong and it could just be the feed, but I am getting over 5% milk fat from cows milk. read more
