While I probably sous vide meat about 90% of the time, there are several good vegetarian / vegan dishes I've done and enjoy. You can use different fruits to make compotes. I just add the fruit in pieces with some spices (cinnamon, cloves, chile powder, whatever), a little liquid (juice, brandy, etc) and some sweetness if needed (sugar, honey, maple syrup). read more
