In soups and stews, you may be able to dilute excessive thyme flavors by adding only stock or water; however, note that you also run the risk of diluting other flavors if you add too much. I really like Melanie Denier’s answer, to use potato to absorb the flavor. And to add lemon juice, smoked paprika or cayenne, and pepper. I find that salt, too, can counteract bitterness of herbs and greens, so this might help. read more
