There are mold spores everywhere, so as soon as a spore lands on a piece of bread, and the bread isn't too dry, it will start growing. The only ways to prevent mold on bread are to (a) dry the bread out, which doesn't do it much good as far as edibility is concerned, (b) keep it sealed in a mold-free container, which is unfortunately much easier said than done, or (c) keep it in a freezer, which slows down mold growth. read more
