If by sailing center you mean the center of the force on sails, so the point to which the whole force of the wind on the sail can be concentrated, then it is called exactly as for normal sailors. The transparent part of the sails is normally 'mylar' and a lot of brands use a fiber-reinforced version which they call 'x-ply' for their heavy duty wavesails. Most of the brands today also use some more advanced fiber-reinforced materials which I don't know exactly what is made of. read more
