This question is somewhat subjective, as depending on the situation, such as how its cooked, its taste differs a little; however, basically as with all meat, it is the taste of the fat from the meat that gives red meat its flavor. read more

Later in the year and through January,February and March the meat will tend to taste somewhat bitter as the fat reserves are burned off and the resulting metabolites flavour the meat.
