The difference in meat is like night and day. Wild sturgeon fillets are very much leaner than farm raised sturgeon. The texture is firmer as well. Finally, the taste is very much different. Farm raised Sturgeon have a very fishy flavor. I think the flavor is due to the pellets they are fed. read more
