IMHO, the best pork marinades are on the sweet side. I like brining my pork chops in vinegar and brown sugar, then use a honey garlic or apple butter sauce. Of course my favorite is just to take the plain pork chops, brown them on each side, place in a casserole dish, add pre-made stuffing made with 2 TB brown sugar and pour cream of chicken soup with ⅓ can water and 1 TB Worcestershire sauce added on top. read more
Then, if you want your pork to be extra tender, you can marinate it in a tenderizing marinade made with acids, like citrus juices, vinegar, or wine. For easier tenderizing, use a commercial meat tenderizer by wetting the surface of the meat, and then sprinkling the tenderizer over the meat. read more
