From my outsider knowledge (my brother owns 3 restaurants in Portland and Vancouver), I think there are 4 main factors. * Portland is a “foodie” city and many restaurants use local, organic, sustainable, high-quality ingredients. read more

It also means that raw materials are expensive. It means that rents are expensive and so are utilities. Innovation is prized here and so is ingenuity. People come to Portland to eat food that they cannot easily find in the midwest. And so restaurants have to spend a little more on staff wages for better people and on higher quality, exotic ingredients. read more
