Restaurants, especially high-end ones, do not use inexpensive cookware. Their cookware is likely to be unattractive stainless steel, but it is durable, very functional, and much preferred. Nothing that is cheap could stand up to six hours of constant use, 5 to 7 days a week. read more

Depends on the makeup of the pan, as they have many styles. Handwashing is always better but all stainless steel pans will do fine in a dishwasher, but aluminum pans will not. read more
