Part of my job was quality control. This included deep frying french fries every day with different types of fats and oils. Im my opinion pure beef dripping is by far the best. This is followed by beef shortening and lard. I would not use any of the hydrodgenated vegetable shortenings for health reasons. Peanut oil is good also. read more
