A similar fish, called Pacific cod, is caught on the West Coast. Cod is sold whole—at a weight of up to 10 pounds—dressed, and in fillets and steaks. The flesh is firm, white, and mild in flavor, and this very lean fish can be cooked by almost any method. Try it broiled, baked with tomato sauce, or in chowder.
