Yes, they are edible, just very difficult to source. You will need a chat with a chicken farmer or to breed your own. They are available in cans. almost like a confit. In the UK they are called Cockscombs. A restaurant called Champignon Sauvage uses them on their menu. Not sure on taste but they look great on the plate. read more
