Heat a large regular or cast iron skillet over medium-high heat. Add the mushrooms in a single layer and cook undisturbed for 2 minutes. Flip the mushrooms and cook for 1 to 2 minutes more. Mushrooms are by nature tender and do not need much time to cook. Put the lid on and steam the mushrooms for at least 3 minutes. In case you are using whole mushrooms you can steam these further for 2 minutes. If you find that they are not tender enough, you can put them back into the basket for further steaming. read more
