Vegetable oil is fine with a fairly low flash point - meaning it has to get pretty hot to smoke or catch fire. Peanut oil is probably the best but it's expensive. Canola or corn oil is fine too. Don't use olive oil, it has a high flash point and is not good for deep frying. My favorite is shortening or crisco. read more
Research shows that cooking/frying with vegetable oil is releasing cancer causing chemicals and damage our health. Instead you can use sunflower oil for cooking, olive oil is also not meant for Asian cooking as we do frying which is not applicable with olive oil as its smoking point is low. read more
